Kirk Probasco has had the opportunity to manage such great establishments as The Rio Grill, Carmel, The Pacific's Edge at The Highlands Inn as well as Tra Vigne in St. Helena. At Tra Vigne, Kirk and then Executive Sous Chef Brandon Miller became great working friends, thus creating the foundation for their future venture in Monterey.

Kirk's high energy and warm nature have been the foundation of hospitality at Stokes Restaurant & Bar since they opened their doors in 1996.
